Divide biscuit crumbs into the bottom of four serving glasses. Layer mango puree and cream cheese mixture into each glass. Refrigerate until chilled. Decorate with mint and cubed mangoes.    Mango Cake:  Ingredients: Flour     1 1/2 cups Baking powder   2 tsp Salt     1/2 tsp Cardamom powder  1/2 tsp Mango puree   1 1/2 cups Oil     1/3 cup Caster sugar   2/3 cup Vanilla essence    1 tsp  To Dust: Icing sugar    as required   Method: In a bowl, mix the flour, baking powder, salt and cardamom powder.  In another bowl, whisk the mango puree, oil, sugar and vanilla until well combined. Add this to the flour mixture and fold until there are no traces of flour left. Don’t overmix.  Transfer to a greased pan and bake in the pre-heated oven at 180 degrees C for 40 minutes or until the cake is cooked through and a skewer inserted in the centre comes out with a few crumbs. Transfer to a cooling rack, dust with some icing sugar and serve warm or at room temperature with some mango puree drizzled over it if you’d like.'
